The above entrepreneurs also snapped up 130 ha of ancient Prieto Picúdo vineyards just south of Léon on the high and windswept plains, where vines hug the ground in spider like forms. This forsightness will ensure the special character of this vanishing grape is preserved for you to enjoy in the wines below.

The Estay (jib in Spanish) has a delicate up-front fruit style with great freshness, silkyness and enticing length. The Tombú (no synonym known) is a serious Rosé, with some whole bunches added during fermentation (madreo). It’s packed with rich raspberry compot flavours and lovely freshness.

Estay

This contrasts the wild berry fruit character, with a warm subtle and silky array of flavours. Elegant and fresh on the finish. 6 months in third fill barrels, mostly French and US. 90+ year old vines

Tombú Rosé

Serious, with ripe soft berry fruit and a great lingering flavour. Suggest drinking with a proper Niçoise salad, or shellfish dishes. 90+ year old vines, with 5% whole bunches added during fermentation ("Madreo")

"...this variety [Prieto Picudo] was traditionally used in the area of Leon to make rose wines using an unusual technique called madreo in whihc whole, unpressed bunches of grapes were added to the fermenting must, making up about 5% of the total volume. The Dominio Dostares winery has restored this custom using the Prieto Picudo grape in its Tombu, a rose that wins over even determined red wine lovers. This is a wine with generous alcohol content, an intense bright color, explosive notes of raspberry, pomegranate and grapefruit, and a full lingering, flavor."
